Black Bean Torta on Barr Bungalow

I got Thug Kitchen as a grab bag gift for Christmas (two years ago – eek), and since then it has sat on my living room coffee table as pretty as can be. I mean seriously, these designers knew what I was looking for when they put this book together. It’s gorgeous, and the writing is both witty and hilarious.

The other night I was paging through it and Alex said, “We should eat our way through Thug Kitchen. Seriously, let’s start at the beginning and make a recipe every week.”

I smiled. This is one of those sorta crazy but incredibly awesome ideas that I would usually come up with. Man I love this guy.

So that’s what we’re doing. Tonight I made the first recipe, black bean tortas with coconut chipotle mayo, and we made fried pickles to go along with them. Because… why not?

We decided we’d rate the Thug Kitchen meals on a scale of 1-10, with 10 being the best meal we’ve ever had. I’m very happy to say, we would definitely make this recipe again. Plus, as meat eaters (especially Alex), this was a welcomed change – and he didn’t miss the meat at all.
