I rarely cook make-ahead breakfasts. Mainly because I like spending mornings in the kitchen. There’s something about chopping fresh ingredients and tossing together a healthy meal to start the day. Still, with work, morning workouts and busy weekends, it’s great to have a few make-ahead recipes in your back pocket.
This overnight oatmeal recipe tastes like fall. It’s delicious and couldn’t be easier – I topped mine with chia seeds and milk. Next time I’m sprinkling on coconut + sliced almonds. #yumo
2 apples, cut into 1/2-inch pieces
1-1/2 cups almond milk
1-1/2 cups water
1 cup uncooked steel-cut oats
2 tablespoons brown sugar
1-1/2 tablespoons butter, cut into pieces
1/2 teaspoon cinnamon
1 tablespoon ground flax seed
1/4 teaspoon salt
- Coat the inside of your slow cooker.
- Add all the ingredients to the slow cooker.
- Stir, cover and cook on low for 7 hours.
